Ingredients
1 1/2 cups all purpose flour, plus more as needed
2 tsp granulated sugar
1/2 tsp salt
1/2 cup (1 stick) unsalted butter, chilled and cubed
3 to 4 Tbs ice water, plus more as needed
Directions
  1. Mix the flour, sugar and salt together in a large bowl. Add the cubed butter on top. Using a pastry cutter, food processor or two forks, work the butter into the dry ingredients until all flour is coated.
  2. Drizzle in the cold water, one tablespoon at a time. Stir after each addition. You may not need all of the water. Stop adding water when dough comes together easily and begins to form large clumps. The dough will feel moist and a little sticky, but it will not feel overly wet.
  3. Place the pie dough on a lightly floured work surface. With your floured hands, knead a few times until flour is fully incorporated. Form it into a large smooth ball. Flatten the dough ball into a 1-inch thick disc.
  4. Wrap dough tightly in plastic wrap. Refrigerate for at least 2 hours or up to 5 days.
